Colour: Deep and brilliant garnet colour.
Nose: The nose expresses notes of red fruit, blackcurrant and violet with a finely integrated woody note.
Palate: Dense and structured with a mineral and slightly toasted finish.
Recommendations: Ideal with white meats, poultry or small game birds in a light sauce, or with delicate meats such as veal, in blanquette or just pan-fried. More simply on raw hams or cold meats. Soft and creamy cheeses: Brillat-Savarin, Chaource, Cîteaux...

Geographical situation: Auxey-Duresses (pronounced Aussey) is situated at the threshold of a valley which, from the Côte de Beaune, plunges into the Hautes Côtes de Beaune on the road to La Rochepot and Autun. The appellation extends over the commune of Auxey-Duresses and its hamlets Petit-Auxey and Melin. It adjoins the Meursault, Saint-Aubin, Monthelie and Saint-Romain appellations.
Vinification: Traditional vinification in thermo-regulated vats. Cold pre-fermentation maceration, temperature control, long vatting period during which punching of the cap and pumping over are carried out in an optimal way. Aged in oak barrels for 10 months. 20% new barrels.
Soil: Marly and chalky soils with a lot of stones.
