Colour: The colour is a strong ruby, carmine, intense garnet with purple hues.

Nose: The nose reveals aromas of black fruits (blackcurrant, blueberry) and red stone fruits (cherry), but also spicy notes.

Palate: On the palate, this wine is sustained, structured and well balanced thanks to its round tannins.

Recommendations: Goes wonderfully well with tasty meats such as roast lamb, rib of beef, duck breast or game, but also with spicy recipes. It is very pleasant with strong flavoured cheeses such as Livarot, Munster, Maroilles, Epoisses, Langres, Ami du Chambertin, Soumaintrain...



Geographical situation: The village of Morey-Saint-Denis is located about fifteen kilometres south of Dijon at the foot of the Côte. The vineyard spreads out on the gentle slopes at the front of the hillside at an altitude varying between 250 and 350 metres.

The "Les Blanchards" climate is located on the bed of an ancient river. It is on the spot where the limestone masses carried by the water have accumulated.

Vinification: Vinification in temperature-controlled stainless steel vats over a period of approximately 3 weeks: Cold pre-fermentation maceration at around 8°C. Pigeage and pumping over to extract colour and structure. Fermentation with a temperature peak around 30°C. Post-fermentation maceration at 25°C.
Aged in oak barrels for 16 months, 50% of which are new.

Soil: The vineyard is planted on limestone and clay-limestone soils from the Middle Jurassic period: white oolite from the Bathonian period at the top of the hillside, entrocal limestone from the Bajocian period at the bottom of the slope.
