Located in the heart of the Côte de Nuits between Gevrey-Chambertin and Chambolle-Musigny, the village of Morey-Saint-Denis is rich in Premier and Grand Crus including the renowned Clos de Tart, Bonnes-Mares, Clos de la Roche Clos Saint-Denis, Clos des Lambrays...
Limestone and calcareous clay soils. Vertically in line with the village, the valley alters certain exposures and gives a marly soil.
Harvest by hand. Traditional vinification in thermo-regulated stainless steel. Pre-fermentation – temperature controlled cold maceration during 10 days. Long fermentation during which pigeages and pumping over are performed. Post-fermentation - maceration at 30°C for 5 days. Aged in oak barrels for 16 months. 30% new oak and 70% oak barrels used between 1 and 3 times. The oak is mainly sourced from the Vosges region.
